EGUSI SOUP :- egusi is made from pumpkin seeds

INGREDIENTS
TO PREPARE EGUSI SOUP FOR TWO PEOPLE
1. you need a full tin cup of grinded egusi seeds
2. meat
3. stock fish
4. ugu leaves ( pumpkin leaves)
5. palm oil
6. maggi
7. pepper
8. salt to taste
9. onions
10.water:- 2 table cups

PREPARATIONS
1.put the water to the boil, wash the meat & add to the boiling pot of water, when the meat is tender, add the stock fish with a cube of maggi then cover the pot to simmer for about 5 mins, then add a reasonable amount of palmoil to the mixture then allow to boil.
2. put the grinded egusi to a mortal, add a little water & use a pestal to steeer the mixture, you can add two table spoons of palmoil (optional), then you steer the misture till it becomes fluffy.
3. add the egusi misture to the boiling meat & cover the pot, allowing the soup to simmer for a little while.
4. add the pepper, salt & maggi to taste, allow to boil for about 5 mins more.
5. shred the ugu leaves (pumpkin) & the onions into small portions then add it to the pot of soup, cover & allow to simmer for 2 mins. the soup is ready!
6. serve with pounded yam or fufu.
